Tempeh Tacos – or – How to Be a Vegan

tempeh tacos / a thousand threads
If there’s one thing I really, really hate, it’s healthy food that tastes healthy. So let me just assure you… these tacos do not taste healthy at all. And if you haven’t tried cooking with tempeh (or you don’t even know what this crazy stuff is) this is a really good place to start… tempeh is like tofu’s way cooler cousin, and if there’s one recipe that makes me feel like I could… conceivably, in an alternate universe where cheese doesn’t exist… go vegan, it’s this one.  (Although Mark makes a pretty killer vegan rice pudding… that’s right up there.)

Of course we already know that I’m a terrible vegetarian, so vegan is probably out.  But lately, because we’re on the hunt for what has been making my stomach crazy for the past year, Mark and I have been making an effort to go dairy and (mostly) gluten free… and I’m pretty sure I’ve narrowed the culprit down to dairy… although I’m still weighing the ups and downs of closing my eyes and covering my ears and pretending it’s all a big mistake.  Cheese and I go way back…

Homemade Mallo Cups

homemade mallo cups / a thousand threads
Over the past few years, mallo cups have come to be synonymous with road trips in our house.  Already, there’s something about road trips and junk food that’s a given — you just can’t be cooped up in a car (or plane) for hours at a time without a little sugar to keep you company– but these days there’s just one thing I crave as soon as I get in the car, and that’s a mallo cup.

It might have something to do with my obsession with marshmallows (and especially marshmallow fluff omg… don’t judge) but mallo cups are the best.  Gooey, marshmallow-ey but with an even better texture — I’m telling you, my love of these things is so great that it even knocks out my hatred of shredded coconut.

The power of the mallo cup is a serious thing.  So when I came upon a recipe for what looked like a homemade version, I ran right to the kitchen and made it the same day…

The Best Mother’s Day Ever // Breakfast in Bed (And Banana-Walnut Pancakes)

banana walnut pancakes / a thousand threads
I’m not going to say that I would mind a sweet new pair of sunglasses, maybe that bathing suit I’ve been coveting… but on Mother’s Day, really, all a lady wants is to feel the love.

As a kid I would make my mom breakfast in bed (and she was always very sweet to stay there – in bed – pretending she was still asleep until I drug my lazy butt into the kitchen and up to her room).

I can’t imagine how the food must have tasted. I commend her now for choking it down. But on those mornings she would ooh and aww and make me feel special just for making her feel special, and it was always a good start to the day.

A Strawberry Rhubarb Margarita for Cinco de Mayo

strawberry rhubarb margarita
What’s the measure of a really good man? At the end of a long day, he’ll make you a kickass margarita — and before you even get home, he’ll set everything up and take pictures of it for your blog.  THEN — after you get home and he’s just about to sit down, finally, and relax — and because you’re just a little crazy — he’ll calmly agree to take even more shots… because you have an unexplained but obsessive need to get that one little detail right.  Oh, the patience!

It’s a good one I have on my hands, you guys.

… and we won’t even start on the margarita. I really can’t think of anything better for Cinco de Mayo than this sweet, tart, tasty concoction — I mean it epitomizes spring, does it not? And since the process involves making a fresh batch of rhubarb simple syrup that will keep in the fridge, we’ll be drinking these guys all weekend.

Do you have any big plans for the 5th of May? Any excuse to cook up a little Mexican food and break out the margaritas is a good one in this west coast lady’s book. Goodness I miss that food, go out and have some for me if you’re lucky enough to live where it’s right! Sorry east coasters, your Italian food is better — at least you have that.

Spring Recipe /Pin/spiration

spring recipe inspiration
This spring, my pinterest boards are overflowing with at least an extra 10 pounds of delicious, totally worth the splurge drinks, desserts, and so much more… I mean, salt & vinegar chips on chocolate cake? Genius.

If that thought has your mouth watering just as much as mine, then you might want to continue this little adventure and take a look at the rest.  But for now, here’s a start on a few of the tasty treats I’m dying to make this season…

Ham & Cheese Biscuits

ham & cheese biscuits / a thousand threads
I have an obsession with ham. Well, okay maybe it’s all pork products, but especially ham. I suppose you can blame it on the fact that I’ve been a terrible vegetarian for about five years. I say terrible because while I’m a “vegetarian,” I have one or two (or five) exceptions to the rule.

Nutella Strawberry Shortcake

nutella strawberry shortcake / a thousand threadsnutella strawberry shortcake / a thousand threads
We don’t usually keep nutella in the house. I’d love to — but we can’t.

You see, even if we tried it wouldn’t stick around long. Because when it’s in the house I have a bad habit of taking a spoonful every time I pass the kitchen. I know you can sympathize… nutella is just too delicious to leave lonely in the cupboard.

Orange Gin Fizz

Here we go again with the citrus.  What can I say, there’s a lot of it in the house.  And who’s going to say no to a fresh-squeezed orange gin fizz?  Certainly not me.

Future Farmers and Florida Grapefruit (Caramelized Florida Grapefruit)

caramelized grapefruit / a thousand threads
Mark’s work is a veritable smorgasbord of crazy local food options.

Wanna buy half a pig? Sure. Moonshine? Why not. He works in an office… but it’s a small town farm country office and apparently this is standard practice.
